Bromelain is a proteolytic enzyme complex that is isolated from the stems and fruits of pineapples. It consists mainly of thiol endopeptidases, supplemented by other proteins and carbohydrates. It is characterized by the concentrated form of the extract, whose enzyme content is many times higher than that naturally contained in pineapple juice. This makes bromelain a defined and particularly effective bioactive component.
