Pectin

Pectin is a plant polysaccharide that consists mainly of polygalacturonic acids and is found in the cell walls of pome and citrus fruits as well as in other plants. It is characterized by its ability to form gel structures in aqueous solution and thus contribute to the stability and texture of organic matrices as a binding agent.
