Guar gum

Guar gum is made from the ground seeds of the guar bean, Cyamopsis tetragonoloba. It consists mainly of galactomannans - plant polysaccharides made up of galactose and mannose units - which have a high swelling and binding capacity in water and therefore produce a pronounced viscosity.
